INGREDIENTS

  • 1 T oil
  • 2 pieces of ham
  • 2 carrots
  • 2 stalks of celery
  • 1 large onion
  • 1 potato
  • 1 package of split green peas
  • 2.5 cups of vegetable or chicken stock
  • 1 clove of garlic, minced
  • 1 bay leaf
  • parsely, minced

INSTRUCTIONS

  1. Peel and finely dice carrots, onion, and potato.
  2. Finely dice ham, and celery.
  3. Sweat the garlic, carrots, celery, and onion with a bit of oil in a pressure cooker.
  4. Add the rest of the ingredients, except for parsely.
  5. Cover the pressure cooker and cook at full pressure for 15 minutes.
  6. Allow the pressure cooker to cool enough for the pressure to be released.
  7. Garnish with parsely, and add salt and pepper to taste.

It is also possible to cook this recipe in a regular pot. Keep the pot covered, and be prepared to let it boil for quite some time until the peas rehydrated and get mushy.

This recipe makes 4 to 6 servings.
